<p>Aloo Gobi or Alu Gobi is a traditional north Indian delicacy which is a dry dish made from Potatoes and Cauliflower and Indian spices. Aloo Gobi is a staple dish in Punjab and now is quite popular across the globe as well.</p>
<p>Ingredients:</p>
<p>1kg tomato cut into small cubes</p>
<p>11/2\&#8221; piece ginger</p>
<p>2 garlic pods</p>
<p>25 gms lemon juice</p>
<p>1tblsp non-fat yogurt</p>
<p>oil as per requirement</p>
<p>500 gms cauliflower florets</p>
<p>1 tsp cumin seed</p>
<p>12 potatoes chopped</p>
<p>50 gms vinegar</p>
<p>250 gms onion very finely sliced</p>
<p>100 gms cilantro leaves</p>
<p>salt and red chillies to taste</p>
<p>2 green onions</p>
<p>1/2 tsp tulsi leaves</p>
<p>1/2 tsp turmeric</p>
<p>Method</p>
<p>1. Boil diced potatoes and cauliflower florets in water with salt, cayenne, turmeric and 1 tbs oil.The potatoes will take longer than the cauliflowers to boil. You will need to take off the cauliflower florets first.The vegetables should be cooked but firm.</p>
<p>2. Grind ginger and garlic.If fresh ginger is not available, use 1/2 tsp ginger powder.</p>
<p>3. Chop the coriander and the green onion finely</p>
<p>4. Mix sliced onion with basil, vinegar and olive oil.</p>
<p>5. Marinate 10-15 minutes.</p>
<p>6. In a small kadhai on medium heat, mix in 1 tbs oil. When hot, mix in the cumin seeds.Fry the cumin seeds until it is slightly brown in colour</p>
<p>7. Add the onions to this mixture and stir fry till the onions are golden brown</p>
<p>8. Add the ginger and garlic Saute for a few minutes.</p>
<p>9. You can now add the aloo (potatoes) and gobi (cauliflowers) to this mixture along with the finely chopped tomatoes</p>
<p>10. If you find the veggies sticking to the wok, you can use some dahi (yogurt) to keep it moist.</p>
<p>11. Cook this mixture at a low temperature till the vegetables are ready</p>
<p>12. Garnish with cilantro leaves and a slice of tomato</p>
